Cold-raised buns with seeds

A very easy recipe for buns that are full of seeds and rye flour cold-raised in the fridge overnight. Makes about 10 buns.

Ingredients
  

  • 500 ml Dryk Oat Drink
  • 12 g fresh yeast
  • 50 g oats
  • 50 g pumpkin seeds
  • 50 g flaxseeds
  • 1 tbsp sugar
  • 1 tbsp salt
  • 100 g rye flour
  • 300 g white flour

Instructions
 

  • Mix the yeast in the oat drink.
  • Mix oats, seeds, salt and sugar in there. Then mix in the two types of flour. It is a pretty wet and sticky dough.
  • Cover the dough and place it in the fridge over night - a minimum of 10 hours.
  • Take the dough out of the fridge and turn the oven on 250 degrees celcius with a baking tray in there as well to heat it up.
  • When the oven it hot, you grab a baking sheet, to spoons and a glass of warm water.
  • Use the two spoons to place buns on the sheet.
  • Pull the sheet onto the warm tray and put it back in the oven. Pour the warm water at the bottom of the oven to create steam and shut the oven door. Turn the heat down to 200.
  • bake the buns for about 15 minutes until nicely golden. Let them cool a bit before eating.
